Easy and economical party snacks
1. Spiced peanuts
Heat about 3-4 table spoons of cooking oil in a pan, fry the peanuts till they pop. Chop an onion, a tomato, some coriander leaves and 2-3 green chillies and toss them in peanuts. Don’t forget to add a bit of salt and lemon juice.
2. Easy Mixed veggies salad
Toss half a bag of mixed, cut frozen veggies in a pan of boiling water and let boil for 5 minutes. Strain and cool. Add low fat mayo or Greek yoghurt (or both) for a filling salad.
3. Meatballs with onions
Strain and wash canned meatballs. Sauté some ginger, garlic and lots of sliced onions in 2 table spoons of oil. Add meatballs and let brown. Finish with a dash of crushed pepper.
4. Mock satay
Peal and skin cucumber and carrots. Slice to cubes. Sprinkle salt . Skewer on toothpicks along with Olives. Chill till serving time and serve with dips.
5. Crispy bread with dips
Cut Lebanese bread (Cubboos) to small pieces and crisp them in the oven (Or microwave on full power for a minute or 2). Serve with Tahina or any other dip of your choice.
6. Egg rolls
Boil eggs and cut into quarters. Sprinkle pepper and salt. Roll puff pastry and cut into squares. Fill the pastry with the egg, fold them and brush with milk. Bake till golden brown.
