Good Morning Omelette

Here is an easy and economical omelette for breakfast before work, an easy dinner when you get home or a lazy brunch for you and your friends at the weekend. Enjoy!
Ingredients:
3 large eggs
1 Tbsp water
Freshly ground black pepper
A handful of grated cheddar cheese, or 1 oz of grated Parmesan cheese
2 knobs of butter
8 cherry tomatoes, cut in half, or 1 medium tomato, sliced
A few leaves of fresh basil (optional)
Method:
1. Turn on grill in oven and place oven rack at the top level closest to grill.
2. Beat the eggs with the water until fluffy.
3. Add a couple of twists of black pepper and the grated cheese and beat lightly.
4. In a small saucepan heat one knob of butter until it foams, but doesn’t burn. Add the tomatoes and fry for about 5 minutes, until they turn soft. Keep warm on very low heat and add the basil.
5. In a small non-stick frying pan heat the other knob of butter and when it’s foamy add the egg mixture. Reduce the heat to as low as possible and cook until eggs have set and the top is runny (5-8 minutes).
6. Spoon the tomato mixture onto the eggs mixture and pop the frying pan under the grill for about 30 seconds, until the top of the omelette has set but not turned brown.
7. Serve with toast, crusty bread, or with bread and a salad for brunch.
