Seven-Layer Casserole

Here is an easy and economical dish to make any time during the week, or at the weekend.  It can be frozen and baked at a later date.Ingredients:
1 cup uncooked rice
1 cup canned sweet corn
2 (8 ounce) cans tomato sauce
1/2 cup chopped onion
1/2 cup chopped green pepper
3/4 lb uncooked ground (minced) beef
4 slices streaky bacon, cut in half
Salt and pepper
1 cup water

Directions:
1. Preheat oven to 350°F.
2. In a 2-quart ceramic casserole dish layer the rice and the corn and add salt and pepper to taste.
3. Pour one 8 oz can of tomato sauce and half of the water over the first two layers.
4. Now add the onions and green pepper, then the ground beef.
5. Pour the second can of tomato sauce and 1 can of water over the ground beef.
6. Cover with the bacon.
7. Cover with foil bake for 1 hour, then uncover and bake for 30 minutes more.
